Default how do I sign out of gmail on my device for good?

So even if I sign out of gmail on the browser, and then go to settings and delete all the history and cache; if I open the browser back up it turns out the phone has actually saved my gmail username and password somewhere. Because I can still get back into my gmail without entering my password.

I don't like the idea if my phone was stolen (or lost and found by someone who kept it) then they could access my emails.

Use a computer to access your google account. Go to My Account, Sign-in & Security, Device activity & security events, Review Devices. Select your phone from the list and choose Remove. This will sign you out of all google stuff on your phone.
